Cleaning out the Fridge - Ham & Goat Cheese

I am trying to be better about using what I've got on hand before running to the store for dinner. For tonight I've got a couple of slices of madrange ham, and half a large log of goat cheese. Plus a decent stocked panty. Was thinking of satueeing some shallots and garlic, adding the ham and goat cheese, tossing with some whole wheat penne and then baking off with some breadcrumbs and parmesean on top. Question is, would this hold together well enough? I've also got some grape tomatoes, would that be a nice addition? Or white beans? Or I could go an omelette with the above too?
