I love shellfish. I love going to restuarants like Florent and ordering huge bowls of mussels with a side of fries (or 'frites' as the more pretentious would call them). Anyway, what I don't love is that somewhat bitter/nasty taste from whatever is in the belly of the mussel or clam.
I might be imaginingm this, but I swear when I was younger I used to eat shellfish that didn't have the nasty full belly. I believe it was because of a "fasting" process before harvest. Does anyone know of this? Does anyone know where I could find cleaner mussels and clams?
