I'm looking to cook up several dishes to clean out the fridge and would like some inspiration. I'm cooking for one and am running low on funds, so I can't afford to hit the grocery store.
Ingredients that need to be used up in the next day or two: 3 medium sized mirlitons (chayote), 2 skinned chicken leg quarters, about a dozen red potatoes. I also have 5 bananas that are too ripe for me to enjoy raw, but about two days from becoming banana bread. All in all, waaay too much food for one person to eat by herself for the next couple days -- at least I can freeze the banana bread.
Also available are boneless skinless chicken breasts, frozen homemade pesto, about 1/3# frozen hamburger meat, spinach, butter beans, some shredded sharp cheddar, and the typical staples.
I'm thinking of one or two meal's worth of chicken and mirliton jambalaya. Any other ideas for inventive and savory combinations?
