Run don't walk to Claudio's in the Italian Market if you love smoked moz. They make it themselves out of their own fresh made daily , soft, lovely milky moz(which I could live on with a Metropolitan baguette,a good tomato, olive oil and some salt.)Tasted it yesterday and went bonkers. Not rubbery and fake tasting like others I've had and the very soft texture is wonderful. A fab, LOCAL treat. Obviously not an authentic Italian cheese, but a marvelous, delish guilty pleasure. Support our local cheese maker this summer when you make fresh (not smoked) mozzarella with tomatoes and basil.(Trader Joe's moz is weeks old and contained in flavor killing plastic.) By the way , if you store fresh moz in half water, half milk, it will last longer. All milk, even longer.
