She was the pastry chef at Gramercy Tavern, author of THE LAST COURSE, pretty much the finest dessert cookbook I've ever seen, and she left GT to consult with Pret-a-Manger (a fairly bizarre career move, but . . . )
Somewhere in there, she married Gerry Hayden, formerly exec. chef at Aureole. Today I read that the intensely gifted couple is about to debut (March 24) as exec. and pastry chef at Amuse, the new restaurant in the old Tonic/Harvey's Chelsea Bistro space on 18th Street near Sixth Avenue.
My questions: What impact has Fleming had on Pret-a-Manger? Is she still consulting? Anyone know anything more about the new venture?
