Clams, mussels, oysters, lobster

Hubs and I are celebrating our 15th wedding anniversary soon. We live in the mid-west but love seafood. Needless to say we are not experts at cooking seafood due to the lack of availability. We are going to order some and have it delivered. This is very pricey, but we want to have an awesome day of melted butter dripping down our chins and good wine. :)
We want preparations easy, just steamed or sauteed fancy recipes.
I need advice on preparations please. I'm going to order clams, mussels, oysters, and lobsters.
Is there a particular kind of clam we should buy? They have little necks, steamers and cherrystone. I'm not against buying all 3. I just need to know the easiest and best way to wash and cook them.
I need advice for a wine to cook with and drink.
Thank you for any tips and advice. We will be spending a lot of money on this and we don't want to ruin it.
