I love clams in black bean sauce. My brother who lives in Pennsylvania loves them even more and he is coming to visit soon. I used to get them at a restaurant on Mott Street but the chef has left and now, after years of bragging to my brother about being able to get the "good stuff" here in New York City, I may get laughed at.
I tried them last night at Congee Village. They were good but not the best sauce. It had too sweet an edge to it. I am looking for impeccably fresh clams in a savory sauce with ginger, garlic, black bean, and scallions. Please help me out, Chowhounds, there must be many good versions of this dish being served in Manhattan's Chinatown, but where?
