My wife and I found a recipe for clafourtis in a cookbook. First admission -- I've never eaten it before, so I don't know what it should taste like. But, we're game, and the picture and description promised deliciousness. We put all of the batter together and put it in the oven to bake. First, it took almost twice as long to bake as the recipe said it should -- the middle was liquid, like a pudding, and wouldn't firm up for a long time. Second, it didn't really rise at all -- should it? Third, the taste was not the light confection I was expecting -- very heavy and egg-flavored. Any idea what we might be doing wrong?
