I just made something I'd totally forgotten about. Had a large bunch of cilantro in the fridge that would have gone slimy before I ever got around to using it. So I washed and trimmed it, put it into the blender with a couple of garic cloves, two jalapenos, a bit of salt and just enough olive oil to make it blend (maybe 2 or 3 tbsp.). Blend until smooth, scraping down the sides of the jar to get it going. It takes a little patience to get the mixture blending well, but eventually it does. Should be about the consistency of a thin pesto.
Absolutely delicious excellent chutney that goes well with so many things - samosas, chicken, steak, sandwiches, whatever. Refrigerated, it keeps much longer than plain cilantro would.
