"Chunk-filled" borscht

Jim's recent posting about Russian places mentioned the excellent borscht at one spot was "chunk-filled." Chunk filled? I guess borscht could have chunks of beef or sausage, but I always thought that the other ingredients in borscht were supposed to be shredded and matchsticked. So I'm puzzled by the reference to "chunk-filled" borscht. Am I missing something as usual?
