I am going to be attempting a chuck roast for Christmas, to feed 15 adults. My research shows that I will probably need 7-8 pounds of roast (does that sound accurate)? My question is: would this size roast fit/be appropriate for the 6.75 quart oval La Crueset dutch oven I just purchased? Or would I be better off cooking two 3-4 pound roasts separately (probably one the day prior to the gathering)? I intend to add potatoes, carrots, & mushrooms with the roast. Any tidbits, recommendations, and advice welcomed for this non-cook. : ) Thank you!
