I have a 2-part question. I would like to make this recipe for Roast Pork: https://www.thekitchn.com/juicy-and-t...

But I'm thinking of using pork shoulder, because its cheaper. I know I would have to increase the cook time. Could I just add the apples & onions at the last hour? Second question, what sides would be good with this? I'm doing dinner rolls for the kids, but would like a veg and another starch side. Any suggestions?
