chowing down in cancun? can i bourdain/zimmern it or will i get burned?

i'll be going to cancun in a few weeks and really want to enjoy all that mexico has to offer, especially the food! i'm a serious foodie, however, i'll keep this short and say that i'm a stay-at-home mom, and am getting away for a week (for the first time since my two-year-old's been born) with some girlfriends and the last thing i want to do is have some tacos from a cart or a horchata and come away with the "revenge" and be laid up in bed the whole week when i'm supposed to rejuvenating my spirit! can anybody give me any experiential advice on whether i'm safe eating from the street vendors/hole in the wall places or am i taking too large of a risk? either way ... where should i eat and get the real deal for yucatan cuisine?!
