I need chow help with my southern road trip

I'm thirty. I bought a new car. I have two months off from work. I live in Los Angeles. My favorite uncle in North Carolina is very ill. I love the South. I like driving. I love southern cooking...So were going on a road trip; my girlfriend, my dog and I. We’ve decided to call this road trip “The 1st Annual Great Southern Food Drive”.

We have one goal, to combine great southern cooking, culture and beaches into one terrific road trip.

I want to hightail it down to Texas. Remember I'm leaving from Los Angeles. Get some great BBQ. Then head to Brownsville for seafood and see some water. Head north to the 10. Take the 10 east to 95. Take 95 north to my uncles in Wilmington N.C.

I need help. What would you say are the cultural highlights of my drive? I'd like to keep away from urban areas.

Can anyone recommend tucked away restaurants? Back wood crawfish feasts. Really pretty alligator infested swamps where I can get a good bite to eat. My favorite place for Q when I was a kid was in N.C. right on the southern border. A guys bus broke down so he turned it into a restaurant, well a kitchen, and the food was great.
