A friend of mine who has a groovy little bakery and lunch joint in Dorset, VT, recently decided to add crepes to his menu. He also got turned on to chourico, which he ordered up some quantity of (not sure how that happened since he's a vegetarian). Now he's hot to do some kind of chourico crepe, & is picking my brain for recipe ideas. My first blush was that chourico is a little heavy for a crepe; once I put that aside, I suggested the sautéed pepper and onion treatment, which he tossed out because he's already doing that with chicken sausage. So I recommended maybe avocado, or something with kale or cabbage for a Portuguese slant (braised cabbage with a little vinegar -- or raw in a kind of spicy slaw).
Now I throw it out to the hounds...any ideas?
