Making eating plans for our upcoming Paris trip. One dish that I like is not particularly fancy, and certainly not modern: Choucroute Garnie. Due to its non-au-courant status, internet info on CG is old and generally useless, so I'm asking here. I assume it will be at a brasserie or an Alsacian place, which is fine since my wife doesn't eat CG and will find something else. As I understand it, a lot of the famous brasseries are amalgamated into a large ownership group.
So, do I just pick any brasserie or are there one, two, or three that I should aim for? Alternatively, are there places I should avoid?
