Chopped Salad Ideas Needed

Both my DH and my coworkers love my version of the 7 layer salad. It's basically chopped romaine, scallions, celery, cukes, red bell peppers and frozen peas topped with an updated mayo dressing version of the recipe: 1/2 c. mayo and 1/2 sour cream with Penzey's Sandwich Sprinkle or Lemon Pepper (both samples) added in. Then it is topped with cheese and bacon bits. I have made some wonderful salads in the past but they all ask me to make this one. The few times I've had leftovers, I've noticed that it is a sturdy salad that keeps for a few days. I'd like a few other ideas other than greek and southwestern bean and corn salads (I have recipes for those). I am primarily looking for something that will keep a couple of days and can be made ahead. I'd like to stick to mostly veggies, light on cheese and bacon or other animal protiens. The dressing does not need to be dairy based. I'll be bringing it for lunch, so I'll be making it mostly for myself. Thanks
