Thought I'd roast a chicken and prepared to make gravy only to discover that although my chicken possessed a liver and kidney, it had apparently existed free of a neck. SO, used some parts I had frozen instead of the neck and popped resulting broth in the freezer. Schmaltz! Immediately thought chopped liver. (not kosher variety) Search revealed a good looking recipe from Rachel where she uses some sauteed onions and some raw. I have yellow cooking onions and I have Visalia and am trying to decide what to do. Am leaning towards using the Visalia and keeping it raw. Views?
