No-Chop Meals

I burned the everloving heck out of my left hand (sloshed hot oil on myself) and it is pretty much immobile for the moment. I can't survive for more than 24 hours on what my husband can cook, and don't really want to have him chopping things for me because he gets home late and has no idea what he's doing. I can manage to lop the ends off of onions and smash garlic to toss in the food processor, but anything more than that is beyond me. I can get help opening cans. Any thoughts on what I might be able to cook, without resorting to boxed mac or Hungry Man dinners? Tonight I threw some brown rice in the rice cooker and then made soup with homemade chicken broth, lentils, canned tomatoes, frozen green beans, and food processored garlic and onions, and I can always resort to seared protein+frozen veg, but I'm looking to maybe make lemonade from the lemons and add some no- or low-chop meals to my repertoire.
