Have been searching and following links to get ideas for dim sum, Cantonese, Shanghainese restaurants and am overwhealmed. So many choices and I hate the thought of missing that great can't-be-missed dish. Living in the San Francisco area, I eat in a lot of good Chinese restaurants but I keep hearing that Vancouver/Richmond has some even better. So let me ask the Chinese food fanciers on this list: what two or three restaurants would you try if you only could do that many? And have you favorite dishes to recommend?
