Chocolate to use in this recipe?

I'm interested in the simple cookie recipe linked below. But it calls for a "block of ambrosia chocolate". I don't know what that is. I'd like to know where I can get this, (Los Angeles area),or what would make a good substitute. I prefer a dark, bittersweet choc. What would happen if I melted a bar of Valhrona bittersweet, etc and used it?
