DRAT!! i just realized that i will be out of town for the chocolate matzah-making workshop at the JCC (jewish community center) next month. is anyone planning on attending? i could really use some pointers on technique. every year i try to wing it and it usually sucks. i'd like to experiment with shmorah matzah even -- might that be sacreligious??? -- 'cause i like it so much, but basically i just want decent, unsoggy, homemade, chocolate matzah!! :)
since i don't know much about chocolatiering maybe i should just check out recipes for dipping cookies, pretzels and the like.

ps BTW, how are the cooking classes at the JCC in general? i noticed in the brochure that a longtime chowhound regular teaches there now--a good sign overall.
so, what's it like taking classes/teaching there? i attended a public affairs-type event there a few weeks ago and found it kind of cold and impersonal. of course, the clean, modern newness of it is also a plus, especially if the kitchens benefit...are they as spectacular as they claim?
