How to keep the chips soft?

Last weekend I made mint chocolate chip ice cream with fresh mint (delish!). My only gripe was that the chips disrupted each bite. I used a quality chocolate which in retrospect seems like a waste. They were too crunchy -- almost waxy tasting. Any recommendations on how to remedy this and keep the chips softer?
