Chinese steamed meatballs

I was reading a cookbook titled Dim Sum, by a woman named Leblonde (as I recall--I'll post more about this book later on), and she gives a recipe for steamed meatballs. These meatballs include a small amount of baking soda. Can anyone make a reasonable guess about what purpose the baking soda serves?
