When Chinese Restaurant Shrimp Was Great

If you're older and wonder why shrimp dishes you remember fondly from many years ago just aren't the same today, it's not your taste buds it's the shimp itself. You can argue the pluses and minuses of aquaculture but one thing is not debatable, farm raised shrimp pale in comparison to their wild counterparts, tastewise. I guess it was in the early 1990's when Chinese restaurants started to switch over from wild caught product to farm raised. It started with a trickle then a deluge to the point that you would be hard pressed to find wild shrimp today in any Chinese restaurant. Farm raised shrimp are much cheaper, their uniformity is almost perfect and they don't experience the peaks and valleys of availability and price. I had some "Fantail Fried Shrimp" recently from a local takeout Chinese restaurant recently. The batter was delicious and the dish well prepared but the shimp underneath were bland and insipid. Sad but I guess this is progress. For me, I don't order shrimp dishes in Chinese restaurants anymore and in other restaurants I always ask if the shrimp is wild.
