Chinese hot oil (refrigerate or not)

my wife and I just got back from shoppping at a new chinese market and finally remembered to get a jar of hot chili oil (capsicum w/red oil)and I am not sure whether to refrigerate after opening. That said, I know not to use a contaminated utensil when scooping oil.

BTW, my mother in-law, who is from Taiwan, is astonished by the fact that nothing in chinese grocery stores come with an expiration date. what's up with THAT?
