There is a discussion on the SF Bay Area board about Chinese Chicken Salad:
Which has reminded me of the Chinese Chicken Salad at Le Bou Bakery and Cafe. Several years ago I used to work in the Sacramento area frequently this was a lunch staple.
A little googling didn't turn up any recipes. It's a very simple salad with sliced cabbage and other greens, light dressing, poached (?) shredded white meat chicken and topped with roasted peanuts.
It was always voted the top salad in those reader polls. Does anyone have a copycat recipe for this? Thanks.
