Chilaquiles - Poor Man's Dish, or a Tortilla's True Calling?

Even though my Mexican friends have made fun of me for it, I can't get enough Chilaquiles. Sure, they are just a way to use up stale tortillas, but they are so delicious... I can't resist. Stale tortillas + eggs = excellence

Anybody else want to share an affection for this dish? My favorite places to get Chiliquiles are below, but I am very open to any new suggestions.

1. Cha Cha Cha - 656 N. Virgil (Okay, they are more carribean than mexican, but I have yet to meet its match)
2. Alegria - 3510 W Sunset Blvd
3. Tere's Mexican Grill - 5870 Melrose (eggless, but totally delicious - plus the owners are over-the-top nice and friendly)
