This summer, visiting DC, we went to this restaurant http://menomale.us/mangi/ and had a dish called "coccio" which is what anything that's baked in a terracotta pan is called so it doesn't give much of a clue in looking up online. Was wondering if anyone has had anything like it and how it might be made.
It's served in a casserole type dish and comes not quite the consistency of hummus. It's between a chop and a purée of feta and chick peas, with mozzarella baked on top. I've tried making it at home using the mozzarella milk like to thin it but it just doesn't taste like at the restaurant. Not sure if I should add some lemon juice or what the proportions should be.
Haven't seen any similar recipes on line - any ideas/recipes?
