chicken for use throughout the week

I am trying to figure out how to make a specific type of chicken. For those of you who have been to Trader Joe's, they sell a chicken in their refrigerated section that is cooked and diced up. You can use it on salads, with rice, whatever.

Any ideas as to how I would recreate?

The only thing that I can figure out is that it would probably need to be marinated or brined. I want the chicken, on it's own, to have a bunch of flavor. I think that one of the ingredients TJ's uses is orange juice.

I am such a chicken lame-o that I don't even know how I would go about making some chicken that would be low maintenance enough to just make at the beginning of the week and shred up / cube for use the rest of the week.

And because of my own weird eating rules (if you have seen my blog, you have a clue), I would want to make the chicken from a whole chicken (either cooked whole or cut up) and then take the skin off / debone after cooking. No skinless/boneless chicken breasts for me!

Oh yah, and I don't have a barbecue.
