Making a bunch of dinners to freeze for my convalescent father and worn-out-from-nursing mother. Have already made a lamb curry they like and have a veal stew on the stove (baby artichokes, black olives, tomato, garlic, white wine, stock). Got some stuffed cabbage from the Polish deli. Cannot for the life of me think of what to do with chicken thighs. Coq au vin? Will freezing harm the mushrooms? Other ideas??? Thanks in advance.
Also, just occurred to me I have a great recipe for pork tinga (essentially a spicy pork stew that you shred to put in tortillas) -- would that freeze OK do you think and would you shred the meat before or after freezing? (As you may be able to tell, I don't freeze things often.)
