in honor of chicken little i made some chicken thigh meatballs the other night. god-damn they were good.
boneless skinless chicken thigs processed in the cuisinart. mixed with finely diced onions, garlic, italian parsley, an egg, parmesan cheese, breadcrumbs, s&p, and i threw in some rosemary that i had. dusted in flour. browned in a skillet. simmered in some sauce i had made earlier. the best. so moist. so moist.
