What do you think of this chicken soup strategy?

I usually make my chicken soup by making a vegetable stock first (only cook for 45 mins with the veggies), leaving the veggies in, adding the chicken, and cooking on super low heat for another 3-ish hours. What do you think about taking the veggies out after the first 45 minutes so that I can get more chicken in the pot? I should mention that I have a 32 quart pot and 16 lbs of chicken (don't worry - i use all the "soup chicken" in tacos, quesadillas, add to other soups, etc).
