Are there any chicken sausanges that don't use either pork or lamb casings? I did a survey at the local Whole Foods, and none were totally poultry. As a non-eater of hooved beasts, is there a chicken sausage out there that will work for me? If so, what would the casing be made of? I'm particularly interested in spicy Spanish/Mexican/Italian styles for use in stuffings/stews/etc.
