I had a chicken dish at a local Mexican restaurant, and I am looking for a recipe for it. It was chicken chunks in a white sauce (maybe with mild cheese, not sure), spinach and mushrooms, with a hint of cumin and chiles. It was delicious. When I asked the waiter what it was, he went back and asked the chef, who called it chicken adobado. All the adobado recipes I see are red--this was not.
Anybody have any ideas?
