Chicken, Potatoes, and Onions

There is this place in North Arlington, NJ called the Roma and they have a dish that I love called Chicken, Potatoes, and Onion. I never see it anyplace else I’m trying to make it myself. This is what I think how it is made… I think the secret is vinegar…. Please let me know if you have any info. I tried this but it seems to be missing something… hmmm

1 Chicken Breast (cut into cubes)
1 cup Frozen French fried potatoes
1 Onion (medium sliced)
1 Tomatoes (wedge)
1 Garlic chopped
½ cup Red Wine Vinegar
Parsley, Salt, and Pepper

Olive Oil
Flour

Cut chicken breast into cubes and roll into flour then removed any extra flour.
In a {ovenproof} hot skillet add oil then brown cubed chicken cook. Then add sliced onion, potatoes, tomato wedges, garlic, parsley, and salt and pepper. Let cooked for a minute then add the vinegar placed in a preheated 425’ oven cooked until done.
