Your chicken-liveriest appetizer

For Halloween, the family is all getting together to hand out candy and have our own little adult cocktail party with an appetizer buffet that will also serve as dinner.

My mother-in-law and sister-in-law are both chicken liver fiends as I am. Normally, I'd do crostini with a simple liver/shallot/sherry on top, but our focus for this party is on things we can make ahead and simply unwrap and bake off that night.

At this point, I'm leaning toward good old rumaki. I've never regretted those. Anyone have a better, easier idea? There will already be one country pate there, so pate is out.
