I was born and raised in a rural area outside of Napoleonville. The standard gumbo at home was a simple chicken gumbo topped off with file. Sometimes duck and gizzards. Occasionaly when someone got to Houma, we would get shrimp, crabs oysters for a gumbo. But the usual Sunday gumbo was chicken. Since moving to New Orleans by way of Houston, I have found every type of gumbo under the sun. All very good, however, I can not seem to locate a plain chicken gumbo. Any idea where I may look next? Again, not complaining. In fact I believe that it would be impossible to find a bad gumbo here, but would just like to try the old chicken file. Any suggeations?
