Chicken Enchilada Question

Hoping those who are knowledgeable with respect to Mexican cuisine can help me out. I'm looking for chicken enchiladas, but not the kind that are filled with chunks of poached or roasted chicken. Rather, I'm thinking of the kind of enchiladas that are filled with a stewed, shredded chicken that's been cooked with chilies and onions and stuff until it sort of disintegrates into chicken meat fibers and takes on a sort of sweet, spicy, chickeny flavor. I suspect this won't help, but Cuchina, the long defunct southwestern place that used to be on the second floor of the Wells Fargo center downtown had a great version of this type of enchilada (which they made with blue corn tortillas).

Do any of you guys know what I'm talking about? Does this type of enchilada exist outside of my imagination, and if so, does it have a name? Most importantly, is there a place within 75 miles of downtown LA that makes a great version of this dish?
