Chili is a great fall meal that's easy to throw together and makes great leftovers as well. In this video recipe, Amy Wisniewski from the CHOW Test Kitchen shows how to break out of the normal, beefy chili routine by making a delicious chicken-based chili using our White Chicken Chili recipe.
This hearty recipe is made for cooler weather. The chili, which is made with ground dark-meat chicken, poblano peppers, black beans, and butternut squash is capped off with a thick layer of yellow stone-ground Cheddar cheese grits.
White Lightning Chicken Chili gets its name because it only takes 30 minutes from start to finish to get this one-dish meal to the table. Don't drain the chopped green chiles or navy beans. Serve chili with cornbread.
Lightly charring the lemon slices intensifies their flavor and creates a gorgeous look for this delicious chicken dinner. Be sure to include any of the sweet, tangy liquid the lemons give off in the bowl; it adds incredible depth to the sauce.
