Chicken Ballotine Success!

Just reporting back on the Ballotine:

Redid the chicken ballotine, though this time stuffed with with a prune, currant, and pine nut stuffing (a no alchohol mock up of Ina Garten's Turkey Roulade), roasted at 375 until the internal temp hit 155, then finished at 450 with a maple glaze. It took about 1 1/2 -2 hours to roast through.

I gotta say, that this chicken was the BOMB!!! Looked fabulous, and tasted awesome. My guests (28 16-18 year old high schoolers who were transfixed/grossed out by the boning out demo, loved it) and it will certainly be a do-over next year, though I might move up to the turkey. Highly recommended.
