Here's something that has been driving me crazy for the past few years:
I'm from New York (lower east side) where you can walk into any supermarket and buy chicken necks and backs for soup (at least that is my recollection). Whenever I wanted to make stock, this is where I would turn.
Out in LA land, I am unable to find a place that sells chicken backs. Okay, that is untrue: the chicken place in the farmer's market sells them (though not inexpensive), but I don't live near the Farmers' Market. I'm in Atwater (near Glendale).
So my question is twofold: Where can I buy chicken backs, and what do the supermarkets out here do with those parts? I've asked a couple of Albertsons and Ralphs' butchers, but they don't seem to know.
