In old books I have read of Chicago and postcards I have seen, (1900-1950) I have seen 100's of street scenes of Chicago from the far Southside to the far Northside. I have noticed many pictures of restaurants with there big sign overhanging the sidewalk. Many of these signs just say "Chop Suey"? Back then did these oriental restaurants serve Chinese dishes? Or back then did everyone just chow on chop suey? Did the other oriental dishes just become popular 40 years ago?
