chestnut soup

Had lunch at Cafe Sabarsky today, and the chestnut soup was marvelous. Must duplicate it. I looked in all of my eastern european cookbooks, all over the web - and every one of them uses cream and chicken stock. I am fairly sure that the soup I ate today used no cream, and had a beef stock base. Anybody have an info?
