chestnut flavored sweet potatoes

Japanese sweet potatos. At the Hollywood Farmer's Market - first I tried the guy at the north end, which were OK. But below the halfway point, on the west, one stall down, is this Japanese stand where I got the best sweet potatoes of my life. Baked one hour at 400 degrees. The red one tastes exactly like full, tender chestnut. The yellow one has chestnut matched with this beautiful light sweetness. No salt, no pepper, no butter, no nothing. Beautiful.
