Chemically speaking, what happens when cheese spoils? And how does it spoil?

Someone said the problem is the milk not the cheese?
1. What happens if cheese is left on room temp (1. open 2. closed)
2. What happens if cheese is left on heat (1. open 2. closed)
3. What happens if cheese is left in the refrigerator long after the expiration date (1. open 2. closed)

Chemically speaking what actually happens. Like does heat draw out of the cheese, does it awake something in the cheese. Just what exactly happens?

Mainly curious about 1. parmesane 2. grated parmesane
But also about all cheeses
