Several years ago while travelling in France, I purchased several of his spice mixes in St Malo. Fantastic flavour enhancers, this Michelin chef concocted spice and herb mixtures, one in particular which I have tried without success to replicate. Tresor Oublié, is a mixture to be used for potatoes. The ingredient list: Kombucha, Nori, Nutmeg Sichuan pepper, sesame, spices.Has anyone else played with spices and herbs to replicate this?
