New Chef at Golden Eagle Inn -- Beaver Creek, CO

Sometime during the last few months, Golden Eagle Inn in Beaver Creek got a new chef, David Root. He has a great background that you can google if you like. Golden Eagle has been one of our favorites for years. Owner Don Bird has operated a class act with excellent food at (for Beaver Creek) reasonable prices, but the addition of Chef Root has raised it a notch. We had lunch there this week and were very impressed.

The black bean soup remains the same -- excellent, hot and spicy and warming on a cold December day. Greek Salad with grilled salmon was delicious. Mixed Green Salad with cold rare elk loin was superb. Another new dish is Fish and Chips. The fish is a crispy cod with a light crust and the chips are, well . . . french fries. Very good.

The true pleasant surprise of the meal was the appetizer of spicy Shrimp and Grits. The grits were perfectly cooked with a mirepoix of carrots, peppers and onion. The generous portion of shrimp were fresh and perfectly cooked. The spiciness of the dish was surprising, which is perfect for us, since we really love spicy foods. BUT, if you don't care for spicy, don't order this dish. Otherwise, go for it. You'll love it.
