So I had this brilliant idea... and invited the chef of a local restaurant to our home for dinner. This weekend. I'm not really spazzing out (not really bad anyway), I have most of the dinner under control but I'm stuck on the first course.
I'm starting with an appetizer of parmesan and hazelnut 'crackers' and champagne.
The entree is veal chops with a chorizo and mushroom stuffing, corn pudding on the side.
Dessert is pears poached in Beaume de Venise (forgive my spelling) with honey-vanilla ice cream.
I was thinking that a small salad of butter lettuce and chopped endive with a creamy dijon mustard dressing.
Think that would work? Any better ideas?
