in my opinon both new bouley and daniel lack four star quality. The old bouley before it closed in 1996 was probably only (along with le bernardin) well deserved four star restaurant in nyc. Maybe David bouley isn't putting all his heart into this as he did previously since he's got more important "business" to work on. but hey at least Chef Bouley still cooks in his kitchen.
now daniel.. daniel's been going down hill since former executive chef alex lee has left. yes food was always superb and consistent during "alex era". so where is alex now? watch AMERICAN IRON CHEF you'll see him. now jean francois bruel (former db bistro executive chef) is in charge of everything in kitchen and he proved us over many times that Frenchman don't always cook best French. Apparently his cooking skill is no where close to breathtaking and jaw dropping flavor alex created back in daniel's golden age. Don't get me wrong i'm not saying Bruel is a failure as a chef. I personally feel that my money should be well-spent and his food isnt worth my money. i used to tell my friends "do yourself a favor and dine at cafe boulud if you are going to daniel" well i cant say the same anymore since Chef Andrew Carmellini left cafe boulud as of may 9th. so that leaves me question "is daniel boulud EVER in his restaurant kitchen?" well celebrity chef these days arent chef anymore. and Mr Boulud isn't any different than Alain Ducasse. I hope Daniel doesn't cry after Frank Bruni drops his star.
